Boerewors with pap and chakalaka

This is a traditional South African braai classic. For those who don't know: Boerewors is coarsely ground beef and pork with coriander and cloves. You never unroll it. You grill it as one spiral.
Ingredients
For the braai
- 1 kg fresh boerewors
- Hardwood, such as one of our African braai wood varieties
- Tongs
For the pap
- 500 ml water
- 250 g maize meal
- Pinch of salt
For the chakalaka
- 1 onion
- 1 red bell pepper
- 1 can diced tomatoes
- 1 can kidney beans
- 1 tsp curry powder
- 1 tsp paprika powder
- 1 red chili pepper
- Oil
Preparation

Build a hardwood fire. Let it burn down completely to glowing, gray coals without flames. These are hard coals. You grill over them.

Place the boerewors as a whole spiral on the grate. Do not pierce it. Grill over medium coals for 15–20 minutes until cooked through. Turn carefully with tongs.

Bring water with salt to a boil. Add maize meal and stir vigorously. Cook for 10–15 minutes until it forms a firm pap.

Sauté onion and chili in oil. Add bell pepper, spices, tomatoes, and beans. Simmer gently for 10 minutes.
Serve boerewors on pap with warm chakalaka on the side. ENJOY!
